Dosage and pack size

  • Large size (20UA in foil sachet) will inoculate 600 to 2,000 litres of milk depending on dosage used
  • Small size (5UA screw cap bottle) will inoculate 150 to 500 litres of milk depending on dosage used
  • An approximate guide for usage is 1 Dash mini spoon or 1/8th spoon to 8 litres of milk

Description

TPF is a mix of the following thermophilic cultures:

Streptococcus thermophilus

TPF is a single strain thermophilic culture (Streptococcus thermophilus) used in the production of fresh/high moisture Italian Pasta Filata or stretched curd cheese types as well as various hard and soft styles of cheese. TPF provides the fast level acid production but minimal proteolysis and texture breakdown, via the absence of Lactobacillus delbrueckii subsp. bulgaricus which is in TPC.  For harder drier styles of pasta filata styles of cheese consider substituting some or all the TPF with TPC.

I have found that over many years of providing cheesemaking courses, having some basic cheesemaking experience before you get to the course is an enormous help with taking in the information provided at the course.
