Rennet tablets can be used in all cheese. Each rennet tablet will clot between 25 – 50 litres milk. This is a vegetarian rennet product. Best before is 24 months from date of manufacture but activity will remain very high well past this date. Store in a cool dry place out of direct sunlight. Do not freeze. Dissolve the rennet tablet in 20ml – 40ml of cold pasteurised water before adding to the milk. The clotting time is dependent on milk acidity, temperature, milk composition and milk quality. My personal preference is to use fresh rennet as opposed to rennet tablets.
