MTF 6 is a multipurpose multiple strain mesophilic and thermophilic culture blend. It is culture diversity all in one packet, a no fuss approach to cheesemaking, it’s all been blended for you. But you are not sacrificing cheese flavour with the simplicity. The acidifying cultures produce acid, the Lactobacillus helveticus culture reduces bitterness and adds flavour and the Lactobacillus delbrueckii subsp. bulgaricus for acidity and extra proteolysis. All these cultures produce flavour but also release enzymes for flavour and texture development during maturation.
MTF 6 has rapid acidification between a large temperature range 32°C – 45°C so if your recipe is in this temperature range you can use MTF6.
MTF 6 can be used as the sole starter to make a great cheese that requires a no fuss approach to cheesemaking. Just add ¼ teaspoon or 1 x ‘tad’ on minispoons to 8 – 10 litres milk.
