This rack is ideal for those cheesemakers that require additional draining and ripening racks due to increasing volumes of cheese being made. The rack can be used:
- as a base to drain curd while it is still in the hoop
- store cheese on timber or metal ripening shelves while it is being matured
- to add to a ripening container for maturation and humidity control while the white or blue mould is growing or cheese is being washed.
- It fits neatly into the 8, 12, and 24 litre cheese vats so you can also use those vats as a ‘Ripening Container’ after you have finished making your cheese, especially if you have larger cheese to ripen or mature.
