Blue cheese wrap. 15micron Aluminium foil with cheese varnish (dull side to cheese). The cheese varnish protects the Aluminium foil from the acids in the cheese. All cheeses should be dry on the surface before wrapping, including condensation that may form when cold cheese is taken out of a fridge. Domestic foils should not be used in wrapping blue cheese, they are not made to the same standard and quickly break down on contact with the acidic cheese surface.
