Types of Cheese DH 40 can be used on

Lactic acid set curds eg Chaource, Neufchatel, Chevre, Chèvre frais, St-Maure.  White Mould ripened cheeses eg Camembert, Brie Triple Cream, Washed rinds styles eg Raclette, Port Salut, Reblochon, All Blue Vein styles, Milled Curd.

Dosage and pack size

·         Large size (10 Doses) will inoculate up to 2500 litres of milk (foil sachet)
·         Small size (1.6 Doses) will inoculate up to 400 litres of milk (screw cap bottle).
·         Add ¼ to ½ drop spoon to 8 litres of milk. Less or more can be applied depending on the intensity of flavour required.

Description

·         DH 40 contains Debaryomyces Hansenii yeast.

·         DH 40 is an activator culture, which is very effective at stimulating other cultures at the start of the maturation process.

·         DH 40 is a typical component of almost all washed rind.

·         DH 40 enhances flavour by its high proteolytic and high lipolytic activity.

·         DH 40 due to it fast growing will assist foreign mould development and keep a clean rind.

Cheesemaking tips for getting the best from this culture

·         DH 40 is one of the most acid tolerant yeast and will grow in all cheeses pH. Its primary role is to consume residual sugars and deacidifies the surface of the cheese.

·         The amount of flavour DH 40 contributes during the ripening of the cheese makes it is the most significant of all the yeasts. Flavour development will be increased again if DH 40 is sprayed on the surface of the cheese as well as added to the milk during cheese making.

·         Most of the flavour development is by degradation of the proteins, but also a limited amount of lipase activity. Aromas developed include fruity, nutty, malty, bread and cheesy notes.

·      DH 40 is more salt resistant than CU 77, therefore more active where dry salting or brines are involved.

·         DH 40 is not physically visible on the cheese.

·         DH 40 and CU 77 can be used independently or in conjunction with each other

·         DH 40 is used added with washed rind cultures to assist and promote B Linens development.

·         DH 40 due to it fast growing will assist foreign mould development and keep a clean rind.
