My name is Graham Redhead and I am very pleased to be the owner and founder of Cheesemaking, established in 2003. I personally run all cheesemaking classes.
My former role was as a Dairy Technologist with the Queensland Department of Primary Industries for nearly 20 years. I had a role in working with many commercial dairy factories across all disciplines from developing new products, training industry, maintaining quality standards. While working for the DPI, I developed Australia’s first Farmhouse Cheesemaking Workshop in 1995. Prior to this I worked with Nestle, Parmalat and Carlton Breweries.
I was born onto a small family dairy farm and learnt to milk cows from a young age and loved the raw milk straight from the cow. I still do. I studied food technology at Gatton Agricultural College and have completed a Bachelor of Business at Qld University of Technology.
I really enjoy the involvement and interaction of people that attend the cheesemaking classes. I try to make learning lots of fun but I am determined to make sure your cheese is of the best quality possible.
I continue to provide training and consultancy services to cheese and dairy manufacturers.
I have judged at dairy competitions run by agriculture bodies, dairy associations and am currently the chief judge at the Brisbane Cheese Awards.
